Raita

Ingredients

  • 1 Lebanese cucumber, deseeded and grated
  • Salt and freshly ground pepper
  • 2 cloves garlic, crushed
  • ¼ cup of mint, finely chopped
  • Juice of half a lemon
  • 200g natural yoghurt

Method

  1. Grate cucumber and season lightly with salt, lightly press into a sieve and drain for five minutes.
  2. Place the garlic, mint, lemon juice and yoghurt into a medium bowl. Stir through the cucumber and season to taste with pepper.
